  • 1 1/2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup brown sugar
  • 3/4 cup honey
  • 1/2 cup vegetable oil
  • 1 cup strong brewed tea or coffee, cooled
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  3. In a separate bowl, whisk eggs, brown sugar, honey, oil, vanilla, and tea or coffee until smooth.
  4. Pour wet ingredients into the dry and mix until just combined.
  5. Pour batter into prepared pan and tap to remove air bubbles.
  6. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack. Optional: brush top with warm honey.
  8. Slice and serve plain or with butter, cream cheese, or fresh fruit.
