  • 4 large pita breads
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/2 cup diced cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut each pita bread into wedges. Arrange them on a baking sheet in a single layer.
  3. Drizzle the pita wedges with olive oil and sprinkle with salt and pepper.
  4. Place the baking sheet in the oven and bake for about 10-12 minutes or until the pita chips are golden and crispy.
  5. Remove the pita chips from the oven and sprinkle half of the shredded mozzarella cheese over the top.
  6. Evenly distribute the cherry tomatoes, olives, cucumber, red onion, and feta cheese over the cheese layer.
  7. Sprinkle the remaining mozzarella cheese on top of the toppings.
  8. Place the nachos back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. While the nachos bake, whisk together olive oil, lemon juice, dried oregano, salt, and pepper in a small bowl.
  10. Once out of the oven, drizzle the dressing over the nachos and sprinkle with fresh parsley.
