- 4 large pita breads
- 1 cup shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced black olives
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cut each pita bread into wedges. Arrange them on a baking sheet in a single layer.
- Drizzle the pita wedges with olive oil and sprinkle with salt and pepper.
- Place the baking sheet in the oven and bake for about 10-12 minutes or until the pita chips are golden and crispy.
- Remove the pita chips from the oven and sprinkle half of the shredded mozzarella cheese over the top.
- Evenly distribute the cherry tomatoes, olives, cucumber, red onion, and feta cheese over the cheese layer.
- Sprinkle the remaining mozzarella cheese on top of the toppings.
- Place the nachos back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- While the nachos bake, whisk together olive oil, lemon juice, dried oregano, salt, and pepper in a small bowl.
- Once out of the oven, drizzle the dressing over the nachos and sprinkle with fresh parsley.
