  • 4 large pita breads
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup Kalamata olives, sliced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the pita breads into triangles. Arrange them in a single layer on a baking sheet.
  3. Drizzle the pita triangles with olive oil, then sprinkle with salt and pepper. Toss to coat evenly.
  4. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until golden and crispy.
  5. While the chips are baking, assemble the toppings. In a bowl, combine cherry tomatoes, cucumber, red onion, olives, and parsley.
  6. In another small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  7. Once the pita chips are baked, remove them from the oven. Layer the mozzarella and feta cheese evenly over the chips.
  8. Spoon the vegetable mixture over the cheese layer.
  9. Return the baking sheet to the oven for an additional 5-7 minutes, allowing the cheese to melt slightly.
  10. When done, remove from the oven and drizzle the dressing over the nachos.
