- 4 large pita breads
- 1 cup shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup Kalamata olives, sliced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the pita breads into triangles. Arrange them in a single layer on a baking sheet.
- Drizzle the pita triangles with olive oil, then sprinkle with salt and pepper. Toss to coat evenly.
- Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until golden and crispy.
- While the chips are baking, assemble the toppings. In a bowl, combine cherry tomatoes, cucumber, red onion, olives, and parsley.
- In another small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Once the pita chips are baked, remove them from the oven. Layer the mozzarella and feta cheese evenly over the chips.
- Spoon the vegetable mixture over the cheese layer.
- Return the baking sheet to the oven for an additional 5-7 minutes, allowing the cheese to melt slightly.
- When done, remove from the oven and drizzle the dressing over the nachos.
