  • 1 cup celery, diced
  • 1/2 cup frozen peas
  • 1 small onion, chopped
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or cream
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme
  • 1 cup all-purpose flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt (for dumplings)
  • 1/2 cup milk (for dumplings)
  • 2 tablespoons melted butter (for dumplings)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, melt butter and sauté onion, carrots, and celery until soft. Stir in flour and cook 1 minute.
  3. Gradually whisk in broth and milk. Simmer until thickened. Season with thyme, salt, and pepper.
  4. Stir in cooked chicken and peas. Transfer to baking dish.
  5. In a bowl, mix dumpling flour, baking powder, salt, milk, and melted butter. Drop spoonfuls over the filling.
  6. Bake uncovered for 30–35 minutes until dumplings are golden and puffed.
  7. Let rest 5–10 minutes before serving. Garnish with parsley if desired.
