Crock Pot Beef Chuck Chili: An Amazing Ultimate Recipe

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- ½ teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- Fresh cilantro for garnish (optional)
- Shredded cheese and sour cream for serving (optional)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and brown them on all sides.
- In the same skillet, add the diced onion, garlic, and bell peppers. Sauté until softened, about 5 minutes.
- In the Crock Pot, add the browned beef, sautéed vegetables, diced tomatoes (with juice), kidney beans, black beans, chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, pepper, beef broth, and Worcestershire sauce.
- Stir everything together until well combined.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once cooking is complete, taste the chili and adjust seasoning if necessary.
- Ladle the chili into bowls. Top with shredded cheese, sour cream, and fresh cilantro if desired.
