Delicious and easy to make cranberry crumble bars with a buttery shortbread base and topping, filled with a tart and sweet cranberry-orange mixture.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 1 large egg
- 3 teaspoons vanilla extract
- 3¼ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- 2½ cups fresh cranberries
- 1 tablespoon cornstarch
- 1 tablespoon finely grated orange zest
- 1 tablespoon fresh orange juice
Instructions
- Prepare the crumble dough: Cream together softened butter, ½ cup granulated sugar, and ½ cup light brown sugar until light and fluffy. Beat in the egg until just combined, then stir in 2 teaspoons of vanilla extract.
- In a separate bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. The dough will be crumbly. Divide into two portions, with one slightly larger for the base.
- Press the larger dough portion evenly into the bottom of a greased and floured 9×13 inch baking pan.
- Prepare the cranberry filling: In a medium bowl, combine fresh cranberries, ⅔ cup granulated sugar, cornstarch, orange zest, orange juice, and 1 teaspoon vanilla extract. Toss to coat.
- Spread the cranberry filling evenly over the base. Crumble the remaining dough portion loosely over the top of the filling.
- Bake at 375°F (190°C) for 35-45 minutes, or until the topping is golden brown and the filling is bubbly and thickened. Allow to cool completely in the pan before cutting.
