- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup long-grain rice, uncooked
- Salt and pepper to taste
- 2 cups fresh spinach or kale (optional)
- Lemon wedges (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté for about 5 minutes or until the vegetables begin to soften.
- Stir in the minced garlic, dried thyme, and dried parsley. Cook for an additional minute until fragrant.
- Carefully add the chicken broth to the pot. Bring the mixture to a gentle boil.
- Stir in the shredded chicken and uncooked rice. Reduce the heat to low and cover the pot.
- Let the soup simmer for about 20-25 minutes or until the rice is tender and fully cooked.
- If using, add the fresh spinach or kale in the last few minutes of cooking to wilt.
- Taste the soup and season with salt and pepper as needed.
- Ladle the soup into bowls and serve hot, garnished with lemon wedges.
